Remember when I posted how to easily make cauliflower rice and I promised that I would post a recipe to use it in? Well, here it is. If you missed that one, you can find it here. I made this the other night and my family loved it!

It is low in calories, low in fat and high in protein. The carb count would not work for someone doing Atkins during induction but is low.
It is super easy and comes together quickly, making it perfect for a weeknight dinner.
First, whisk together the sauce ingredients: rice vinegar, water, low sugar or sugar free ketchup, soy sauce, salt, garlic powder, xanthan gum and sweetener.
Then, cut 1 pound of chicken breast into chunks. Cut the peppers into chunks. Aren’t they beautifully colorful?!
In a small saucepan, start heating the sauce on low-medium and let simmer while cooking the chicken and peppers, whisking occasionally.
Heat a large pan over medium-high heat. Spray with cooking spray or use 1 tablespoon of coconut oil. Add the chicken with some fresh minced ginger and garlic according to your liking. I LOVE garlic so I used 2 cloves and about 1/2 teaspoon of minced ginger. Cook for 4-5 minutes to brown chicken.
Remove the chicken and set aside. Lower the heat to medium and add a little more oil to the pan. Stir fry the bell peppers for 4-5 minutes.
Add the chicken back in and stir fry until fully cooked.
Add sauce to the chicken and peppers and serve over cauliflower rice.
